Peanut Butter Balls
1 Smart Balance Omega-3 Buttery Stick
1 cup Smart Balance Rich Roast Creamy Peanut Butter
1/2 teaspoon vanilla extract
1/8 teaspoon salt
9 crushed graham crackers
1 1/2 cup powdered sugar
1 1/2 cup chocolate chips
Melt peanut butter and buttery stick in small sauce pan over medium-low heat, stirring constantly until mixed; remove from heat. Stir in vanilla and salt. Add crushed graham crackers and powdered sugar, mix well.
Form into 1-inch balls, using approximately 1 tablespoon of peanut butter mixture per ball. Refrigerate until firm or overnight in air tight container.
Melt chocolate chips in double boiler or microwave method (30-second intervals) until smooth. Dip balls into melted chocolate and place on wax-paper lined cookie sheets; let sit in a cool room/ refrigerate until chocolate hardens.
Remove from sheet when set and store refrigerated until ready to serve.
