Summer grilling

MERIDIAN — Basic Grilled Burger Recipe

2 lbs. ground beef

1 egg, beaten

1 /2  cup dry bread crumbs

3 T milk

Combine all ingredients gently. Prepare grill. Now the fun part! Divide ground beef mixture into thirds. To the mixtures add 1 heaping tablespoon of *Fajita Seasoning to one, heaping T of *Garlic salt to another and heaping T of *any Grill Mates seasoning to the last beef mixture. Form into approximately 9 patties. Lightly oil grill grate. Grill patties for 5 minutes on each side or until done. Tip: use colored toothpicks inserted into burgers to mark different flavors. Let guests build their burgers with these “add ons.” Blue cheese, cheddar cheese, bacon, lettuce, tomato, onion, jalapenos,

*any trio of seasoning mixture may be used.

All American Potato Salad

5 lbs. red potatoes

6 eggs

2 cups mayonnaise

1 onion, diced

2 green onions, thinly sliced

1 small green bell pepper, seeded and diced

3 stalks celery, thinly sliced

2 tsp. salt

1 tsp. ground black pepper

garish with paprika and fresh parsley

Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes or until tender but still firm. Drain, cool and cut into cubes.  Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.  In a large bowl, combine chopped potatoes and eggs. Mix together mayonnaise, chopped onion, green onion, green pepper, and celery. Season with salt and pepper, then mix well. Cover, and refrigerate for several hours or overnight.

Strawberries and Cream Dessert

1 (10 inch) angel food cake

2 (8-oz.) packages cream cheese, softened

1 cup white sugar

1 (8 oz.) container frozen whipped topping, thawed

1 quart fresh strawberries, sliced

1 (18 oz.) jar strawberry glaze

Crumble the cake into a 9x13 inch dish.  Beat the cream cheese and sugar in a medium bowl until light and fluffy. Fold in whipped topping. Mash the cake down with your hands and spread the cream cheese mixture over the cake.  In a bowl, combine strawberries and glaze until strawberries are evenly coated. Spread over cream cheese layer. Chill until serving.
