Comforting Chili recipes

MERIDIAN — Black Bean Chili

3 (15 oz.) cans black beans

1 onion, chopped

1 lb. lean ground beef

4 tsp. chili powder

1 tsp. cumin

1 /2 tsp. red pepper

salt and pepper to taste

1 (14 oz.) chicken broth

2 (14.5 oz.) cans petite diced tomatoes

1 /4 cup diced jalapenos

1 small can green chilies

  toppings: sour cream, shredded cheese, cilantro, chopped tomatoes, yellow banana peppers

    Rinse and drain 2 cans black beans (not third can).  Cook ground beef and onion then drain off fat.  Stir in chili powder and next 3 ingredients. Cook one minute. Stir in drained and undrained beans, chicken broth,  diced tomatoes, jalapenos, and green chilies.   Bring to a boil over medium-high heat; cover, reduce heat to low, and simmer 20 minutes.  Serve chili with desired toppings. 

Chicken & White Bean Chili

3 to 4 cups chopped cooked chicken

4 (16 oz.) cans navy beans, drained and rinsed

4 (4.5 oz.) cans chopped green chiles

1 (14 oz.) can chicken broth

2 T Chili Seasoning Mix packet

 garnishes: sour cream, dried cilantro

    Stir together first 5 ingredients in a Dutch oven; bring to a boil over medium-high heat, stirring occasionally.         Cover, reduce heat to low, and simmer, stirring occasionally, 15 minutes. Can be slow cooked in crock pot for 3 hours on low.  Garnish if desired.

Southwest Chili

1 T olive oil

1 large onion, chopped

2 large tomatoes, chopped

1 (4 oz.) can chopped green chilies, undrained

1 T chili powder

1 tsp. ground cumin

1 (15 oz.) can red kidney beans,  undrained

1 (15oz.) can Great Northern beans, undrained

1 /4 cup dried cilantro

    Heat oil in large saucepan over medium heat.  Add onion; cook until tender, stirring occasionally.  Stir in tomatoes, chilies with liquid, chili powder and cumin.  Bring to a boil.  Add beans with liquid.  Reduce heat to low; cover.    Simmer 15 minutes,  stirring occasionally.  Sprinkle individual servings with cilantro.  4 servings.
