MERIDIAN — Football season is already upon us. Here’s a few ideas to “kick off” your tailgating party. All three recipes can be made ahead of time and packed and ready to go.
Buffalo Chicken Dip
1 pkg. (8oz.) cream cheese
3 /4 cup cooked, chopped chicken breast
1 /2 cup Buffalo wing sauce
1 /4 cup crumbled blue cheese
1 /4 cup sliced green onions
Spread cream cheese onto bottom of microwaveable 9-inch pie plate. Mix chicken and sauce; spoon over cream cheese. Sprinkle with blue cheese and onions. Microwave on HIGH 2 minutes or until heated through. Serve with celery stick and Wheat Thins.
2 lbs. lean ground beef
1 (1oz.) package ranch dressing mix
1 egg, lightly beaten
3 /4 cup crushed saltine crackers
1 onion, chopped
Preheat grill for high heat. In a bowl, mix the ground beef, ranch dressing mix, egg, crackers, and onion. Form into hamburger patties. Lightly oil the grill grate. Place patties on grill and cook 5 minutes per side or until done. Serve on your favorite bun or roll with lettuce tomato and cheese and black pepper.
Chocolate-Oatmeal Chunk Cookies
2 sticks butter , softened
1 cup firmly packed brown sugar
1 /2 cup sugar
2 large eggs
2 teas. vanilla
2 cups all- purpose flour
3 /4 teas. baking soda
1 teas. salt
3 cups uncooked regular oats
1 (11.5oz.) package semisweet chocolate mega morsels
1 cup chopped pecans
Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating well.
Combine flour, baking soda, and salt; add to butter mixture, mixing well. Stir in oats, morsels, and pecans. Drop by rounded tbls. onto ungreased baking sheets. Bake at 350 for 9 minutes until golden. Cool slightly on baking sheets; transfer to wire racks to cool completely. Makes 5 dozen.
